1 ¼ pound boneless chicken breasts (not thin sliced)
1 tablespoon olive oil
Salt and pepper to your taste
1 teaspoon Italian seasoning (or just 1 teaspoon garlic salt powder with pinch of oregano)
3 tablespoons of butter or ghee, melted
1 teaspoon minced garlic
¼ cup chicken broth
2 tablespoons lemon juice
1 tablespoon chopped parsley
Preheat oven to 400 degrees. Season chicken breasts after washing with salt, pepper and Italian seasoning.
Heat the olive oil in a large pan over medium high heat. Add the chicken breasts and cook for 3-5 minutes minutes on each side, until brown.
Transfer chicken to a baking dish or pan.
In a small bowl, mix together the butter, garlic, chicken broth and lemon juice. Pour this mixture over the chicken.
Bake for 25 minutes, or until chicken is fully cooked inside. Take the remaining sauce from the baking dish with a spoon and pour over the chicken breasts.
Sprinkle chopped parsley on top and garnish with lemon slices.
